Ingredients
  

Pasta
  • 8 oz elbow macaroni or shells, cooked al dente
Seafood
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb lump crab meat, drained Optional: can add 1/2 cup scallops or firm white fish chunks
Cheeses
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup Monterey Jack or mozzarella cheese
  • 2 oz cream cheese, softened
Sauce Base
  • 2 cups whole milk (or half-and-half for extra creaminess)
  • 1/2 cup seafood stock or chicken broth
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp dry mustard powder
  • Salt and freshly ground black pepper, to taste
Garnish
  • Fresh parsley, chopped (for garnish)
  • 1/2 cup panko breadcrumbs mixed with 1 tbsp melted butter Optional for a crunchy finish

Method
 

Preparation
  1. Bring a large pot of salted water to a boil. Carefully add 8 oz of elbow macaroni and cook until just al dente, about 7-8 minutes. Avoid overcooking to prevent mushiness when baking. Drain and set aside.
  2. Pat the shrimp and crab meat dry with paper towels, then season lightly with salt and pepper. If using scallops or fish, cut them into bite-sized pieces.
Making the Sauce
  1. In an oven-safe skillet, melt 3 tbsp unsalted butter over medium heat. Add in 3 tbsp of all-purpose flour, whisking constantly for 2-3 minutes until fragrant.
  2. Slowly pour in 2 cups of whole milk and 1/2 cup seafood stock or chicken broth while whisking vigorously, cooking until the sauce thickens, about 5-7 minutes.
  3. Stir in 2 cloves of minced garlic, 1 tsp smoked paprika, and 1/2 tsp dry mustard powder. Adjust salt and pepper to taste.
  4. Lower the heat and whisk in 1 cup of sharp cheddar cheese, 1 cup of Monterey Jack, and 2 oz of cream cheese until melted and smooth.
Combining Ingredients
  1. Add the drained pasta to the cheese sauce, stirring gently to coat. Fold in the seafood, being careful not to break up the crab meat.
  2. If using, sprinkle panko breadcrumbs mixed with 1 tbsp melted butter over the top.
Baking
  1. Preheat your oven to 375°F. Place the skillet in the oven and bake uncovered for 15-20 minutes until the top is golden and bubbly.
  2. Remove from the oven, sprinkle with chopped parsley, and let it rest for 5 minutes.

Notes

For enhancing flavors, consider adding a splash of lemon juice at the end. To prevent seafood from becoming rubbery, add it towards the end of cooking. The dish can be stored in the fridge for up to three days in an airtight container.
