Ingredients
  

For the Cream Filling
  • 16 ounces Mascarpone cheese Look for thick, mild, and fresh mascarpone.
  • 4 large Egg yolks Can be substituted with extra whipped cream for a no-egg version.
  • 0.5 cups Sugar Regular granulated sugar.
  • 1 cup Heavy cream Must be cold for whipping.
  • 1.25 cups Strong coffee or espresso Cooling time is necessary before soaking.
  • 7 ounces Ladyfingers Savoiardi are traditional.
  • to taste Cocoa powder For dusting before serving.
  • 1 pinch Salt
  • to taste Vanilla extract Optional.
  • to taste Rum, Marsala, or coffee liqueur Optional for an alcoholic version.

Method
 

Preparation
  1. Brew the coffee or espresso and let it cool. Hot coffee will make the cookies soggy fast, so give it time.
  2. In a bowl, whisk the egg yolks with sugar until it looks lighter and a bit creamy.
  3. Add mascarpone and mix just until smooth, being careful not to overmix.
  4. In another bowl, whip the cold heavy cream with a pinch of salt until it holds soft peaks. Fold it gently into the mascarpone mixture.
Assembly
  1. Dip ladyfingers quickly into the cooled coffee, like one second each side. Line them in your dish.
  2. Add half the cream mixture, smooth it out, then repeat another layer of dipped ladyfingers and the rest of the cream.
  3. Cover and chill at least 6 hours, preferably overnight.
Finishing Touch
  1. Right before serving, dust generously with cocoa powder.

Notes

Do not over-soak the ladyfingers, quick dip only. Use a deeper dish for nice layers. Store covered in the fridge; best within 2 to 3 days.
