  • 2 tablespoons olive oil Adds flavor and helps in caramelization.

  1. Preheat the oven to 400°F (200°C). A hot oven is essential for that golden, flaky crust.
  2. In a large pan, heat the olive oil over medium heat. Add the sliced onions, a pinch of salt, and cook, stirring occasionally, until they become soft and dark golden brown, about 20-25 minutes.
  3. Roll out the sheet of puff pastry and cut it into circles that are slightly larger than your tartlet molds.
  4. Place the pastry circles in the molds, pressing gently to fit. Add a generous spoonful of caramelized onions to each.
  5. Sprinkle the grated cheese over the onions, ensuring it's well distributed for even melting.
  6. Place the tartaletas in the preheated oven and bake for 15-20 minutes or until the pastry is golden and the cheese is bubbly.
  7. Let them cool slightly before garnishing with fresh herbs and serving warm.

Notes

Don't rush the onions for the best caramelization. Use a non-stick mold for easy removal and feel free to experiment with cheese varieties.
