  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar in a large bowl until the mixture is light and fluffy, about 3-5 minutes.
  3. Beat in the egg, lemon juice, and lemon zest until well combined.
  4. In another bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
Baking
  1. Bake for 10-12 minutes, or until edges are lightly golden.
  2. Let the cookies cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
  3. Dust with powdered sugar before serving, if desired.

Notes

Store cookies in an airtight container in the fridge for up to one week or freeze for up to three months. Thaw in the refrigerator and warm in microwave before serving.
