Main Ingredients
  • 200 g pasta (spaghetti or penne) Cook until al dente.
  • 200 g fresh spinach Use vibrant, fresh spinach.
  • 2 cloves garlic, minced Avoid browning the garlic.
  • 2 tablespoons olive oil Choose high-quality olive oil.
  • to taste Salt and pepper Season to your preference.
  • to taste Grated Parmesan cheese (optional) Substitute with a vegan alternative if desired.

Method
 

Cooking the Pasta
  1. Start by cooking 200g of pasta according to the package instructions until al dente, about 8-10 minutes.
Sautéing the Spinach
  1. While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add the minced garlic, and sauté for 1-2 minutes until fragrant, being careful not to brown it.
  3. Once the garlic is aromatic, add the 200g of fresh spinach to the skillet and cook until wilted, about 3-4 minutes.
Combining Ingredients
  1. Drain the pasta, reserving a bit of the pasta water. Add the drained pasta to the skillet with the sautéed spinach.
  2. Toss everything together, adding a splash of the reserved pasta water if needed. Season with salt and pepper to taste.
Serving
  1. Serve hot, topped with grated Parmesan cheese if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet with a splash of water. For easy cooking, prep garlic and wash spinach ahead of time.
