Preparation
- Bring a big pot of water to a boil and salt it well. Add the broccoli rabe first and boil for about 2 minutes. Scoop it out with a strainer and set it aside.
- In the same boiling water, cook the orecchiette until it is tender but still has a little bite. Before you drain, save about 1 cup of that starchy water.
Cooking
- While the pasta cooks, warm olive oil in a large pan. Add the sausage and break it up. Cook until browned and cooked through.
- Add the garlic and chili flakes, stirring for about 30 seconds until fragrant.
- Add the broccoli rabe to the pan and toss so it soaks up the sausage flavor. Then add the drained pasta.
- Pour in a splash of the reserved pasta water and toss everything until it looks glossy and clings together.
- Taste and adjust seasoning, adding more pepper, chili, and a drizzle of olive oil if needed.
- If using cheese, add it off the heat for a creamy texture.
Notes
Leftovers can be reheated in a pan with a splash of water for a glossy finish. Pair with a crunchy salad or garlic bread. This recipe is versatile; you can substitute proteins or add additional vegetables as available.
