  • 1 teaspoon dried basil

  1. In a large pan, heat the olive oil over medium heat until it shimmers but does not smoke.
  2. Add the minced garlic and sauté for about one minute until fragrant, being careful not to burn it.
  3. Stir in the rinsed chickpeas, dried oregano, dried basil, and red pepper flakes. Season with salt and pepper to taste and cook for 5-7 minutes.
  4. Pour in the coconut cream (or heavy cream) and mix well, ensuring the cream blends smoothly with the chickpeas without boiling.
  5. Remove from heat and sprinkle with fresh parsley before serving.

Notes

For leftovers, store in an airtight container in the fridge for up to three days or freeze for about a month. Reheat slowly over low heat. Consider adding lemon juice for brightness or using fresh herbs instead of dried for a vibrant flavor.
