Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) to ensure even cooking and a crispy crust.
  2. Pat dry the salmon fillets with paper towels and season both sides with salt and black pepper.
  3. In a small bowl, combine panko breadcrumbs, chopped parsley, chopped dill, lemon zest, minced garlic, and a pinch of salt.
  4. Brush the top of each fillet with Dijon mustard and drizzle with olive oil.
  5. Press the herb and breadcrumb mixture firmly onto each fillet.
Cooking
  1. Place the salmon on a lined baking sheet and bake for 12-15 minutes, or until the internal temperature reaches 145°F.
  2. Remove the salmon from the oven and let it rest for 2-3 minutes.
  3. Squeeze fresh lemon juice over the top before serving.

Notes

Storage: Keep in the fridge for up to three days in an airtight container. For freezing, wrap tightly in foil and store for up to two months. For extra flavor, consider marinating the salmon before cooking.
