Preparation
- Preheat your oven to 400°F (200°C) to ensure even cooking and a crispy crust.

- In a small bowl, combine panko breadcrumbs, chopped parsley, chopped dill, lemon zest, minced garlic, and a pinch of salt.
- Brush the top of each fillet with Dijon mustard and drizzle with olive oil.
- Press the herb and breadcrumb mixture firmly onto each fillet.
Cooking
- Place the salmon on a lined baking sheet and bake for 12-15 minutes, or until the internal temperature reaches 145°F.
- Remove the salmon from the oven and let it rest for 2-3 minutes.
- Squeeze fresh lemon juice over the top before serving.
