- Stir in soy sauce, chili paste, and maple syrup. Pour in the vegetable broth, bringing the mixture to a gentle simmer.
- Add the mixed vegetables and cook until tender (about 3-5 minutes), maintaining some crunch.
- Add the cooked noodles to the pan, tossing to coat evenly with the sauce. Cook for an additional 2-3 minutes.
- Serve hot, garnished with sliced green onions.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Can freeze for about a month; thaw in the refrigerator overnight before reheating. Reheat gently over low heat, adding a splash of water or broth.
