Ingredients

For the Filling
  • 8 ounces shredded imitation crab meat (drained thoroughly) Ensure it's fresh for optimal texture.
  • 8 ounces full-fat cream cheese, softened to room temperature Opt for full-fat for best flavor.
  • 3-4 stalks green onions, finely chopped
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Worcestershire sauce Can substitute with soy sauce.
  • a generous pinch freshly cracked black pepper
For the Egg Rolls
  • 1 package square egg roll wrappers For a gluten-free option, use rice paper wrappers.
  • as needed high-smoke-point oil (vegetable, canola, or avocado) for brushing or spraying

Method

Preparation of Filling
  1. In a large mixing bowl, combine the cream cheese, imitation crab, chopped green onions, soy sauce, garlic powder, Worcestershire sauce, and black pepper. Mix until smooth and thick.
Assembling Egg Rolls
  1. Unfold the egg roll wrappers and cover them with a damp towel to prevent drying.
  2. Cut each square wrapper in half diagonally to create triangles.
  3. Place 1-2 tablespoons of the crab mixture in the center of each triangle.
  4. Wet the two corners of the long edge with water. Fold the corner over the filling to create a triangle and press to seal.
  5. Fold the left corner over the center, wet the edge, and press to seal. Repeat with the right corner.
Cooking
  1. Preheat the air fryer to 375°F (190°C) or the oven to 400°F (200°C).
  2. Lightly spray or brush the rolls with oil. Arrange them in a single layer.
  3. Cook for 8-10 minutes in the air fryer or 12-15 minutes in the oven, flipping halfway through until golden brown.
  4. Let cool for a minute before serving with sweet chili sauce or your preferred dipping sauce.

Notes

For variations, consider adding diced jalapeños for spice, or substituting with low-fat cream cheese for a lighter option. Can be prepared ahead; store filling in the fridge one day prior.
