  • 1 package gnocchi
  • 200 g chorizo, diced Use good-quality, flavorful chorizo.
  • 1 cup heavy cream Can be substituted with coconut milk for a dairy-free version.
  • 1 cup spinach, chopped Fresh spinach is recommended.
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Preparation
  1. In a large pot, bring salted water to a boil, then add the gnocchi. Cook according to package instructions until they float to the top, indicating they’re done. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced chorizo and cook until crispy, about 5-7 minutes.
  3. Stir in the minced garlic and sauté for about 1 minute until fragrant.
  4. Pour in the heavy cream and bring the mixture to a gentle simmer. Stir in the chopped spinach until it wilts.
  5. Add the cooked gnocchi to the skillet, gently tossing to coat each piece in the sauce. Season with salt and pepper to taste.
  6. Serve hot, topped with grated Parmesan cheese.

Notes

Creamy chorizo gnocchi is fantastic as a standalone meal but can be paired with a side salad or crusty bread. Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months. To reheat, thaw overnight and add a splash of cream or water.
