  • 1 lb ground beef Choose quality beef for better flavor.
  • 4 medium potatoes, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 2 cups shredded cheese (cheddar or your choice) Consider using a dairy-free cheese for dietary needs.
  • 1 can (15 oz) tomato sauce
  • 1 packet taco seasoning
  • to taste Salt and pepper

Method
 

Preparation
  1. In a skillet over medium heat, brown the ground beef until it’s no longer pink.
  2. In a slow cooker, combine the browned beef, diced potatoes, black beans, corn, tomato sauce, and taco seasoning. Mix everything well.
Cooking
  1. Cover the slow cooker and set it on low for 6-8 hours or high for 3-4 hours.
  2. About 15 minutes before serving, sprinkle the shredded cheese on top. Cover until melted.
  3. Taste the casserole and season with salt and pepper as needed. Serve hot.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. For longer preservation, freeze for up to 3 months. To reheat, warm on the stovetop or microwave.
