Preparation
- In a stand mixer bowl, combine the bread flour, granulated sugar, fine sea salt, and instant yeast.
- Pour in the warm milk and add the softened butter, egg, and egg yolk.
- Mix on low speed for two minutes to form a shaggy dough. If too dry, add a splash more milk.
- Increase speed to medium-low and knead for 5 to 7 minutes until smooth and elastic.
- Place the kneaded dough in a greased bowl, cover, and let it rise in a warm area for 1 to 1.5 hours, or until doubled in size.
Shaping and Baking
- Punch down the risen dough and divide into 24 equal pieces, rolling each into a smooth ball.
- Place the rolled balls in a greased 9×13-inch baking pan. Cover and let rise for 30-45 minutes until puffy.
- Preheat the oven to 350°F (175°C) about 15 minutes before baking.
- Bake for 20-25 minutes until golden brown and internal temperature reaches 190°F (88°C).
Glazing
- While the rolls are baking, melt the butter and honey together with the cinnamon for the glaze.
- Brush the warm honey butter glaze over the rolls immediately after removing them from the oven.
- Allow to cool in the pan for 5 minutes before serving.
Notes
For variations, consider adding fresh herbs to the dough or using a different sweetener for the glaze. Store in an airtight container in the fridge for up to four days or freeze for up to three months.
