Ingredients
  

Main Ingredients
  • 1 lb ground beef (80/20 blend) Opt for a blend with around 20% fat for juiciness and flavor.
  • 1 packet taco seasoning Or homemade blend of cumin, chili powder, paprika, garlic powder, onion powder, salt, and pepper.
  • 1 cup shredded cheddar cheese Use freshly grated cheese for a creamier melt.
  • 2 cups iceberg lettuce, finely shredded Wash and shred just before use to keep fresh.
  • 2 medium Roma tomatoes, diced
  • 1/2 small onion, finely diced
  • 1/2 cup Thousand Island or Big Mac sauce Can be homemade.
  • 8-10 large hard taco shells Warm before serving to maintain crispness.
Optional Ingredients
  • Dill pickle chips For an authentic touch.
  • Mustard

Method
 

Preparation
  1. Prep the veggies by washing and shredding the iceberg lettuce.
Cooking
  1. Cook the beef by heating a skillet over medium-high heat and adding the ground beef. Break it up as it browns.
  2. Drain excess fat and season the beef with taco seasoning, adding 2-3 tablespoons of water and simmering for 2 minutes.
  3. Warm the taco shells in the oven at 350°F for 3-5 minutes or microwave for 30 seconds.
  4. Prepare the sauce if making from scratch by mixing mayo, ketchup, relish, vinegar, and spices.
Assembly
  1. Assemble tacos by filling a warm shell with seasoned beef, cheese, vegetables, and sauce.
  2. Serve immediately to enjoy the contrast of warm beef and crisp lettuce.

Notes

These tacos can be stored in the fridge for up to 3 days or frozen for 2 months. Thaw overnight before reheating.
