- Slice chicken breasts into cutlets and pat them dry.
- Season the cutlets with salt and pepper.
- Dredge the cutlets lightly in flour, shaking off the excess.
Cooking
- Heat olive oil in a skillet over medium heat.
- Cook the chicken for 3 to 4 minutes per side or until golden and cooked through, then transfer to a plate.
- Add butter and garlic to the pan, stirring until fragrant.
- Pour in chicken broth and scrape the browned bits from the bottom.
- Add lemon juice and capers, simmering until the sauce reduces slightly.
- Remove from heat and swirl in another tablespoon of butter for a glossy finish.
- Return chicken to the pan, spoon the sauce over it, and top with parsley.
