  • 4 pieces Chicken breasts, sliced in half lengthwise For thin cutlets that cook quickly
  • 1 teaspoon Salt To taste
  • 1 teaspoon Black pepper To taste
  • 1/2 cup Flour For coating
  • 2 tablespoons Olive oil For browning
  • 2 tablespoons Butter For finish
  • 2 cloves Garlic Minced
  • 1 cup Chicken broth Or stock
  • 1/4 cup Fresh lemon juice Plus zest if desired
  • 2 tablespoons Capers Rinsed and drained
  • 2 tablespoons Fresh parsley Chopped, for garnish

Method
 

Preparation
  1. Slice chicken breasts into cutlets and pat them dry.
  2. Season the cutlets with salt and pepper.
  3. Dredge the cutlets lightly in flour, shaking off the excess.
Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Cook the chicken for 3 to 4 minutes per side or until golden and cooked through, then transfer to a plate.
  3. Add butter and garlic to the pan, stirring until fragrant.
  4. Pour in chicken broth and scrape the browned bits from the bottom.
  5. Add lemon juice and capers, simmering until the sauce reduces slightly.
  6. Remove from heat and swirl in another tablespoon of butter for a glossy finish.
  7. Return chicken to the pan, spoon the sauce over it, and top with parsley.

Notes

Serve with pasta, mashed potatoes, rice, roasted vegetables, or a simple salad. Enjoy the sauce poured over your chosen side.
