Ingredients
  

Chicken Cutlets
  • 2 large large chicken breasts sliced in half horizontally to make 4 cutlets
  • to taste Salt and pepper for seasoning
Breading
  • 1/2 cup All purpose flour for a light dusting
  • 2 eggs, beaten
  • 1 cup Italian seasoned breadcrumbs or plain plus a pinch of oregano and garlic powder
  • 1/2 cup Grated Parmesan a handful for the breading, plus more for serving
Cooking Ingredients
  • 2 tablespoons Olive oil for cooking
Toppings
  • 2 cups Marinara sauce store bought or homemade
  • 1 cup Shredded mozzarella or fresh mozzarella slices
  • to taste Chopped basil or parsley optional

Method
 

Preparation
  1. Slice each chicken breast into two thinner cutlets. If they are still thick, gently pound them with a rolling pin.
  2. Sprinkle both sides of the chicken cutlets with salt and pepper.
  3. Set up a breading station with flour on one plate, beaten eggs in a bowl, and breadcrumbs mixed with a little Parmesan on another plate.
Breading and Cooking
  1. Dip each cutlet in flour, then egg, then press into breadcrumbs, ensuring they stick. Let them sit for 5 minutes.
  2. Heat a thin layer of olive oil in a big skillet over medium heat. Cook the cutlets for 3 to 4 minutes per side until golden and crisp.
Assembly
  1. Spoon a little marinara into a baking dish, add the chicken, then top each piece with more sauce and mozzarella.
  2. Bake in a preheated 400°F (200°C) oven for about 10 to 15 minutes, until chicken is cooked through and cheese is bubbly.
  3. Sprinkle with extra Parmesan and basil if desired, and let it rest for a couple of minutes before serving.

Notes

Keep the chicken thin, do not over sauce it to prevent sogginess, and consider variations like adding red pepper flakes for spice or pairing with garlic bread and a green salad.
