Cheesy Taco Lasagna

Ingredients
  

Meat and Seasoning
  • 1 lb ground beef (80/20 preferred) Opt for high-quality beef for rich flavor.
  • 2 tbsp taco seasoning Homemade or store-bought.
Sauce and Spreads
  • 1 cup refried beans
  • 1.5 cups tomato sauce
  • 0.5 cup sour cream or Greek yogurt (optional)
Noodles and Cheese
  • 9 pieces lasagna noodles Regular or no-boil noodles.
  • 2 cups shredded cheddar cheese High-quality cheese recommended.
  • 2 cups shredded Mexican blend cheese
Vegetables
  • 2 pieces green onions, sliced For garnish.
  • 1 piece jalapeño, sliced (optional) Add for extra heat.
  • 1 small onion, diced
  • 2 cloves garlic, minced
Oil
  • 1 tbsp olive oil

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add diced onion, cooking until soft and translucent, about 3 minutes.
  3. Stir in minced garlic, cooking for one more minute until fragrant.
  4. Add ground beef, breaking it apart with a spoon. Cook it until browned, about 7-8 minutes. Drain any excess fat.
  5. Sprinkle taco seasoning over the beef and pour in ½ cup of water, allowing it to simmer for 3-4 minutes until slightly thickened.
  6. In a separate bowl, mix refried beans with ½ cup of tomato sauce to create a creamy spread.
  7. If using regular noodles, boil them in salted water for 8-10 minutes until al dente, then drain.
Assembly
  1. Spread a thin layer of tomato sauce on the bottom of a 9×13-inch baking dish.
  2. Lay 3 noodles over the sauce, then spread half the bean mixture, half the seasoned beef, and 1 cup each of cheddar and Mexican blend cheeses.
  3. Repeat layering with another 3 noodles, remaining beans, beef, and cheeses.
  4. Finish with the final 3 noodles, the rest of the tomato sauce, and the remaining cheeses.
Baking
  1. Bake uncovered for 25-30 minutes until the cheese is bubbly and golden brown.
  2. Allow the lasagna to rest for 10 minutes before serving, then top with sliced green onions and jalapeños.

Notes

Store in an airtight container for 3-4 days in the fridge. Can be frozen for up to 3 months. To reheat, use the oven at 350°F (175°C).
