Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.
  2. In a mixing bowl, whisk together the yogurt, sugar, eggs, and vegetable oil until smooth and creamy.
  3. Zest the lemon and then squeeze its juice into the mixture. Stir to combine.
  4. In a separate bowl, combine the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  5. Fill each muffin cup about two-thirds full with the batter.
  6. Bake in the preheated oven for 18-20 minutes, or until the tops are golden and a toothpick inserted comes out clean.
  7. Allow them to cool in the pan for about 5 minutes before transferring to a wire rack to cool completely.

Notes

Make sure your yogurt is at room temperature for the best texture. For added flavor, consider folding in some poppy seeds or chopped fresh mint into the batter. Store in an airtight container in the refrigerator for up to 5 days or freeze for up to a month. To reheat, pop them in the microwave for about 20-30 seconds or until warm.
